Veggie Pad Thai

Who says you need to go to a restaurant to eat pad thai? It is actually super easy to make (as is all of the recipes that I put on this blog!) – and I, for one, find the homemade version to be quite tasty!

Here is what you need:

  • Whole-grain noodles
  • Broccoli (cooked)
  • Onion
  • Garlic
  • Celery
  • Egg (scrambled)
  • Chopped peanuts

Then I sauteed everything together with some Coconut Peanut sauce (from Whole Foods) and added a bit of my homemade peanut sauce, as well.  Basically, just mix some peanut butter with olive oil and soy sauce if you have it, and then mix that up with the other ingredients.
