Quinoa, for all who are unaware, is one of the healthiest grains you can eat. It is packed with an enormous amount of protein. Like rice, alone, it tastes pretty bland. But combine it with some veggies and sauce – and yum! What a difference.
This recipe below was something that I made the other night and loved. It is super easy to make and also tastes delicious. Cook the different ingredients seperately and then sautee all together with the sauce and almonds.
- Quinoa (boil for about 10-15 minutes)
- Sweet potatoes (slice into thin slices and cook on pan with some herbs/parsley/basil on medium boil, turning over to other side after a few minutes or until lightly brown)
- Spinach (cook on pan with some olive oil and herbs)
- Chopped onions and garlic (cook on pan together)
Once everything is cooked, bring ingredients together on pan and sautee with some Peanut Coconut sauce (I bought mine at whole foods). Now add some almonds and mix all together.
Voila, you are done!
